Fresh fruits are the hallmark of American desserts. The 175 recipes presented here make good use of fruits as well as spices, herbs, nuts, citrus, and liqueurs. From unusual puddings to varieties of crisps (also known as buckles, grunts, brown bettys, brambles, or cobblers), they include cheese-and-fruit marriages such as Sicilian orange espresso cheesecake or gingered figs with cream cheese.
