South America has a fascinating culinary history not often covered in cookbooks. Karoff shares her passion for the cuisine and its history in a lively and informative volume. Ten major countries are featured--all with menus that can be planned by season. Beans, squash, and corn are emphasized, and most other ingredients are just as easy to obtain.
