Kolpas, author of The Breakfast and Brunch Book ( LJ 4/15/88), describes California pizzas that are eclectic, easy to make, elegant, and light. Most of these recipes, especially those featuring vegetables and cheese, are quite appealing; a few verge on the ridiculous (a Reuben pizza?). Evelyne Sloman's The Pizza Book ( LJ 7/84) is one of the best of this genre, but designer pizzas continue to be popular, so most collections could add Kolpas's paperback. (c) Copyright 2010.
